
In the cool stillness lie hundreds of thousands of bottles evoking landscapes, Châteaux and estates, both French and foreign (Bordeaux, Burgundy, Champagne…), going by the name of Lafite, Rothschild, Petrus, Cheval Blanc, Yquem, Romanée-Conti, Dom Pérignon and Cristal Roederer to name a few.
Lovingly watched over by the head cellarman and his team, the bottles only see the light of day when they take their place on the tables of restaurants in the Monte-Carlo SBM Resort. The sommelier presents them to us for approval before finally unveiling their secrets.
With an area of some 1,500m² and a full kilometre of wine racks, the bottles are arranged according to year, laid on large rack-like shelves or kept in their cases. Labels indicate the wines that are currently “in rotation”, i.e. on offer in the hotels and restaurants.
The head cellarman is backed by a team of 10 people who have all adopted the house philosophy: to respect age-old expertise, never to lose sight of the link between the wine cellar and the restaurants, and to remember that the heritage they protect is the legacy of previous generations and a foundation for those to come.
As a result, cellarmen, chefs and sommeliers are able to create wine lists which seek to pair the dishes in each establishment with wines reaching their peak in the cellars beneath.
